FAQ

What is the difference between stoneground flour and regular, commercial flour?

Eureka Mills’ Flour is milled in a very special way, but in order to understand why our processes are special we must first look at how a standard flour mill works. Commercial mills use milling equipment with numerous sets of steel rollers to grind wheat. These rollers generate extremely high temperatures, inevitably damaging the wheat germ and destroying valuable vitamins and enzymes. During this process the fine, top-quality flour is continually extracted for use in cake flour and self-raising flour.

In contrast to this, our milling process utilises only four sets of rollers to split out the bran and then three sets of grinding stones. It is a much slower and natural process that generates relatively little heat. No components are extracted from the flour, it is not bleached, and no additives or preservatives are added. Therefore, Eureka Mills flour retains all the healthy wheat germ, natural oils, vitamins and enzymes; making it rich in fibre, wholesome and nutritious.

What are the benefits of Eureka’s stone grinding process?

No components are extracted from the flour and no additives or preservatives are added. Therefore, Eureka Mills flour retains all the healthy wheat germ, natural oils, vitamins and enzymes; making it rich in fibre, wholesome and nutritious.

What are the wheat farming practices in the Southern Cape?

Eureka Mills uses only high quality, locally produced wheat. In the Southern Cape region, where our mill is based, biological farming which employs minimal tillage, is the norm. This and other sustainable practices such as crop rotation and reduced chemical interventions result in soil which is high in nitrogen and organic materials; which in turn improves the structure of the soil. Healthy soil equates to wholesome and nutritious wheat.

Do Eureka Mills’ products contain glyphosates?

For those consumers that are concerned about the Eureka Mills product range, we have good news. The wheat that we mill, which is grown in the Southern Cape Region of the Western Cape, is NOT sprayed with Roundup during the growing phase or harvesting process. The majority of the farmers in the region have adopted a contemporary approach to working the land, in what is referred to as ’Conservation Farming’.

Conservation Farming has led to a reduction in the need for pesticides and herbicides and farmers are finding that soil conditions and crop yields are increasingly improved as well as being less sensitive to the erratic weather conditions of the Southern Cape.

In November 2018, to quell any possible fears that our consumers may have on this issue, we sent flour samples to the Hearshaw and Kinnes Analytical Laboratory (Pty) Ltd. The analysis confirmed that no glyphosate was detected in the flour sample. READ MORE

Is Eureka Mills’ flour GMO Free?

Yes, the wheat we use for the milling process is GMO free.

I am gluten intolerant, can I use Eureka Mills flour?

Eureka Mills flour contains gluten as our flour is milled from wheat. However, in many instances we have found that customers who struggle with gluten intolerance and digestive issues, experience little to no symptoms/side-effects when baking with Eureka Mills flour. It is our belief that the reason for this, is two-fold:

  • Our flour is not bleached and contains no additives or preservatives – these are often the culprits that cause digestive distress;
  • Our flour is healthy: we retain all the healthy wheat germ, natural oils, vitamins and enzymes; making it wholesome and nutritious.

The recipe on my packaging reads: “Add xxx grams of water”. How much is that?

Good question – it is a lot less complicated than you think. 1 ml of water weighs approximately 1 g. Therefore, if your recipe calls for 700 g of water for a loaf of bread, you should use 700 ml of water.

Happy Baking!
